New Liverpool restaurant Jam spread their passion for real food


2017 is the year of the source. That's the prediction of passionate restaurant owner Joe Matthews.

Mr Matthews who recently opened Jam restaurant in Sir Thomas Street with wife Anne-Marie founded the restaurant based on his love of high quality ingredients that he feels the UK industry sometimes skimp on to save on costs.

"We spent more time researching food suppliers than any other aspect of the business prior to opening as we felt it was the single most important part of our offer to guests.

"I also think next year we will see food reviewers and the general public spending more time focusing on where restaurants source their food from and not just focus on taste...it will be more about the source than the sauce!"

Jam suppliers include McKuhens, a local family run butchers based in Walton Vale, the Scotch Beef Shop, based in Woolton, Neve Fleetwood who promote sustainability, full traceability and are environmentally responsible, Almonds fruit & veg in Edge Lane and the Liverpool Cheese Company.

Mr. Matthews added: "It's fantastic that we have such a burgeoning restaurant sector, I'm keen now for the quality threshold to improve as well with venues being more open about where they source their produce from. This can only help improve the status of Liverpool nationally especially when e.g. food critics are profiling the city on the back of restaurants."
