Forbes’s Corporate & Restructuring team has acted for celebrated chef Paul Heathcote over the sale of his two Preston city centre restaurants.

The Olive Press and Heathcote’s Brasserie in Winckley Square have been purchased by Manchester burger and steak chain Solita.

Forbes, the largest legal practice in the North West outside the major cities, acted for Paul Heathcote’s PH Restaurants (Preston) Limited in the sale of the Olive Press to Solita (Deansgate) Limited.

The firm’s property team also assisted in the transaction.

The two restaurants are to be combined in a major refurbishment to create the biggest bar and grill in the Solita group.

Paul Heathcote opened his original Heathcotes restaurant in Longridge in 1990 and has been in Winckley Square since 1995.
